Here's a simple recipe for homemade pork tocino. This makes me happy everytime I crave for filipino food.
1 lb pork
1/3 cup sugar
1 tablespoon salt
3/4 teaspoon red beet powder (optional)
1 tablespoon vegetable oil
1/3 cup sugar

1 tablespoon vegetable oil
Combine sugar, salt and red beet powder in one bowl. Rub the pork with the mixture, place in a plastic container and put in the refrigerator for a day or two.
This is a good recipe for tocino. No "salitre" which is a carcinogenic ingredient.
